APPEARANCE: Pours like a pousse-cafe. Dark brown on the bottom fading to amber-orange in the middle and a pinkish-red at the top. Very attractive brew.
HEAD: Bone-white, champagne-like fizz, fades fast
NOSE: Classic lambic nose. Tart, sour, dry, raspberries and ripe cherries. Very aggressive and mouth-watering aroma.
TASTE: Not as complex is Cantillon usually is. Just sour, tart, refreshing, and mouth-puckering. Plenty of acidity in the middle and finish and just the barest hint of earthy mustiness to remind you that this is a true Belgian brew.
MOUTHFEEL: Champagne-like mouthfeel. Fizzy, medium-to-light body.
DRINKABILITY: A little too sour to call it an easy-drinkin’ brew, but it’s refreshing and fun. I could definitely put down a few of these.
